Crispy Tofu with Balsamic (Print Version)

01 - 1 block extra firm tofu, pressed and cubed
02 - 2 tbsp olive oil
03 - 1 pint cherry tomatoes, halved
04 - 2 garlic cloves, minced
05 - 2 tbsp balsamic vinegar
06 - 1 tbsp maple syrup
07 - 2 tbsp fresh basil leaves, chopped
08 - Red pepper flakes (optional)
09 - Chopped and roasted nuts (optional)
10 - Salt and black pepper (optional)

# Instructions:

01 - Press tofu, cut it into cubes, and season them with a tablespoon of olive oil, salt, and pepper. Then, bake the tofu cubes at 400°F (200°C) for 25 to 30 minutes until crispy.
02 - While the tofu cubes bake, sauté garlic in a tablespoon of olive oil. Add cherry tomatoes and cook until softened. Stir in balsamic vinegar, maple syrup, basil, and red pepper flakes. Simmer for 2 to 3 minutes.
03 - Once the tofu cubes are crispy, add them to the skillet with the balsamic tomato mixture. Gently mix to coat the tofu cubes with the glaze.
04 - Garnish with fresh basil, red pepper flakes, and chopped nuts. Serve hot.

# Notes:

01 - To achieve the coveted crispy texture, press your tofu properly. Removing excess water will allow it to crisp up beautifully in the oven.
02 - When simmering the balsamic vinegar and maple syrup, keep an eye on it. You want it to thicken just enough to coat the back of a spoon.
03 - Don’t hesitate to experiment with different vegetables, herbs, or vinegars for a personalized twist.
