Shrimp Burgers Asian Style (Print Version)

# Ingredients:

→ Burger Patties

01 - 2 cloves of garlic
02 - 1 jalapeno or a sprinkle of dried chile flakes
03 - 1 inch piece of ginger, peeled and rough chopped or 1 squeeze of ginger paste
04 - 1 ½ teaspoons lemongrass paste, optional
05 - Several grinds of fresh black pepper
06 - 1 pound peeled raw shrimp
07 - ¼ cup rough chopped shallots or onion
08 - ¼ cup rough chopped red or yellow bell pepper
09 - ¼ cup cilantro, chopped
10 - 1 to 2 teaspoons fish sauce, optional
11 - Cooking spray
12 - Buns, optional
13 - Grilled pineapple rings, fresh or canned

→ Asian Shrimp Burger Sauce

14 - 2 cloves garlic, rough chopped
15 - ½ cup mayonnaise
16 - 2 teaspoons fish sauce
17 - 1 tablespoon lime juice
18 - ½ teaspoon sugar
19 - ½ teaspoon fresh ground black pepper, or more to taste

# Instructions:

01 - Combine garlic, mayonnaise, fish sauce, lime juice, sugar, and black pepper in a food processor. Blend until smooth, scraping the sides of the bowl as needed. Refrigerate until ready to use.
02 - Add garlic, chile, ginger, lemongrass paste, black pepper, and ⅓ of the shrimp to a food processor and puree until smooth, scraping the sides as needed.
03 - Add the rest of the shrimp, shallots, bell pepper, cilantro, and fish sauce to the mixture. Pulse to chop, leaving some shrimp chunks. Shape the mixture into 4 slider patties using a ⅓ cup measurement. Chill for at least 20 minutes.
04 - Preheat the grill to moderate heat with a rack positioned 4 inches from the heat source. Spray the patties and pineapple rings on both sides with cooking spray or brush with oil.
05 - Grill patties for 5 to 7 minutes until a crust forms and they release easily, then flip and grill for another 4 minutes. Cook pineapple rings, flipping as needed, until charred and tender.
06 - Serve patties on buns with a slice of grilled pineapple and a dollop of sauce.

# Notes:

01 - Recipe can make 4 mini burgers or 2 standard-sized burgers.
02 - Chilling time for patties is not included in preparation time.
