Feta Cheesecake (Print Version)

# Ingredients:

01 - 1/2 cup butter, melted
02 - 1 1/2 cups crushed graham crackers
03 - 16 ounces creamy soft cheese (cream cheese)
04 - 8 ounces feta, crumbled into small bits
05 - 1/2 cup sour cream
06 - 3 large eggs
07 - 2 tablespoons honey
08 - 1 teaspoon zest from a lemon
09 - 1 tablespoon finely chopped fresh thyme
10 - Salt and black pepper, to your taste

# Instructions:

01 - Set the oven to 325°F to preheat. Stir together melted butter and graham crumbs, then firmly press it into the base of a springform pan.
02 - In a bowl, blend the softened cream cheese, feta, sour cream, lemon zest, thyme, honey, and a bit of salt and pepper until it’s creamy and smooth.
03 - One by one, mix in the eggs. Make sure each is fully incorporated before adding the next.
04 - Pour the smooth filling over the prepared crust and bake for about 45 to 50 minutes, until firm.
05 - Let it cool completely, then refrigerate for at least 4 hours. Add a drizzle of honey and some fresh herbs for garnish before serving.
