Clean the potatoes and carefully shred them using a medium-sized grater on a box grater or food processor. Grate the onion as well.

Place the shredded potatoes in cheesecloth and squeeze out all excess water.

Combine grated potatoes, onion, matzo meal, egg, and salt in a bowl. Mix well and set aside.

Heat a skillet on medium-high heat with avocado oil deep enough to shallow pan fry the latkes. The oil temperature should be around 370-375°F. Test with a small bit of latke mixture to ensure it sizzles.

Scoop about 1/4 cup of latke mixture, flatten it to form a patty, and carefully place it into the pan. Repeat until the pan is full without overcrowding (about 5 latkes in a 10-inch skillet). Fry for 4-5 minutes per side.

Transfer fried latkes to a plate lined with paper towels or a cooling rack to drain. Sprinkle with additional kosher salt, if desired.

Serve latkes immediately as desired.
