# Ingredients:

01 - ⅓ cup maple sugar
02 - ⅓ cup plus 2 tablespoons dark brown sugar
03 - 1 stick softened butter
04 - ½ cup peanut butter with nuts (natural, well mixed)
05 - 1 teaspoon vanilla extract
06 - 1 tablespoon maple syrup
07 - 1 egg

→ Dry Ingredients

08 - 1 cup unbleached flour
09 - ½ cup oats
10 - 1 teaspoon baking soda
11 - ¼ teaspoon salt

→ Add-ins

12 - 1 cup dark chocolate chips

# Instructions:

01 - Beat together the maple sugar, dark brown sugar, butter, peanut butter, vanilla extract, maple syrup, and egg until creamy and well blended. This may take a few minutes.
02 - Mix in the flour, oats, baking soda, and salt. Stir until evenly combined. Gently fold in the dark chocolate chips.
03 - Form the dough into a ball and wrap it in plastic wrap. Chill overnight to allow the oats to absorb flavor and soften slightly.
04 - When ready to bake, preheat the oven to 350°F (175°C).
05 - Form dough into 1-tablespoon balls and place them on a parchment-lined or Silpat-lined baking sheet about 2 inches apart.
06 - Bake for approximately 10 minutes. The cookies may appear slightly underdone but will firm up as they cool.
07 - Allow the cookies to cool on the baking sheet before enjoying.
