Peel, core, and chop the apples. You can leave the peel on for chunkier applesauce if preferred.

Place the apples in a saucepan with a lid. Add lemon juice and water. Bring to a simmer and cook over low heat, covered, until apples are soft, about 15-20 minutes.

Add the cooked apples with liquid to a high-speed blender or food processor. Puree until smooth. For chunkier applesauce, pulse the blender in short increments and stir to reach desired consistency. Ensure the apples are not too hot to avoid pressure buildup in the blender.
