Remove the pits from the dates. Blend the pitted dates and coconut milk together until smooth.

Add the egg yolks to a medium-sized bowl and whisk until smooth.

In a medium-sized pot on the stove, heat the blended coconut milk and date mixture along with the cocoa powder and salt over medium heat.

Slowly add about 1/3 cup of the warm coconut milk mixture drop by drop into the whisked egg yolks to temper them, preventing scrambling.

Add the tempered yolk mixture back to the pot and stir constantly over medium-low heat until the mixture thickens, approximately 3-5 minutes.

Remove the pot from heat and stir in the pure vanilla extract. Transfer the pudding to a bowl or serving dishes, then chill in the refrigerator for at least 2 hours.
