Healthy Chocolate Pudding Dates (Print Version)

# Ingredients:

01 - 4 large egg yolks
02 - 1 cup pitted Medjool dates (approximately 10-12 dates)
03 - 14 ounces unsweetened full-fat coconut milk
04 - 1/3 cup unsweetened cocoa powder
05 - 1/8 teaspoon salt
06 - 1 teaspoon pure vanilla extract

# Instructions:

01 - Remove the pits from the dates. Blend the pitted dates and coconut milk together until smooth.
02 - Add the egg yolks to a medium-sized bowl and whisk until smooth.
03 - In a medium-sized pot on the stove, heat the blended coconut milk and date mixture along with the cocoa powder and salt over medium heat.
04 - Slowly add about 1/3 cup of the warm coconut milk mixture drop by drop into the whisked egg yolks to temper them, preventing scrambling.
05 - Add the tempered yolk mixture back to the pot and stir constantly over medium-low heat until the mixture thickens, approximately 3-5 minutes.
06 - Remove the pot from heat and stir in the pure vanilla extract. Transfer the pudding to a bowl or serving dishes, then chill in the refrigerator for at least 2 hours.
