Frozen Cranberry Salad (Print Version)

# Ingredients:

01 - 1 bag fresh cranberries
02 - 1 ½ cups sugar
03 - 8 ounces cream cheese
04 - ½ cup walnuts or pecans, chopped
05 - 8 ounces crushed pineapple, drained
06 - 3 cups Cool Whip or sweetened whipped cream

# Instructions:

01 - Chop the cranberries finely in a food processor and empty them into a large bowl. Add sugar to the cranberries and stir well.
02 - Chop the walnuts or pecans using a food processor and add them to the cranberry mixture.
03 - Whip the cream cheese using a food processor and stir it into the bowl with the cranberries and nuts.
04 - Stir in the drained crushed pineapple. Fold in the Cool Whip or sweetened whipped cream.
05 - Grease pans lightly with Pam or canola oil. Transfer the mixture into 1 9x5 loaf pan, 2 8x4 loaf pans, or muffin tins lined with paper liners. Freeze until firm.
06 - Let the frozen salad thaw for about 10 minutes before serving. Slice into portions or serve individual ones from the muffin tins on a rimmed tray.

# Notes:

01 - A food processor makes this preparation easier. A blender has not been tested for this recipe.
