Chop the cranberries finely in a food processor and empty them into a large bowl. Add sugar to the cranberries and stir well.

Chop the walnuts or pecans using a food processor and add them to the cranberry mixture.

Whip the cream cheese using a food processor and stir it into the bowl with the cranberries and nuts.

Stir in the drained crushed pineapple. Fold in the Cool Whip or sweetened whipped cream.

Grease pans lightly with Pam or canola oil. Transfer the mixture into 1 9x5 loaf pan, 2 8x4 loaf pans, or muffin tins lined with paper liners. Freeze until firm.

Let the frozen salad thaw for about 10 minutes before serving. Slice into portions or serve individual ones from the muffin tins on a rimmed tray.
