Frito Chili Pie Delight (Print Version)

# Ingredients:

01 - 2 ounces Frito corn chips
02 - ½ pound ground beef
03 - ½ onion, chopped
04 - 2 teaspoons minced garlic
05 - 3 teaspoons chili powder
06 - 1 teaspoon cumin
07 - ½ teaspoon paprika
08 - 2 tablespoons tomato paste
09 - 1 cup Rotel, undrained
10 - 1 cup kidney beans, rinsed and drained
11 - 1 cup cheddar cheese, shredded
12 - 2 tablespoons chopped green onions for garnish

# Instructions:

01 - Add the ground beef and onions to a pot over medium-high heat, and saute until the meat is browned and the onions are softened. Drain the excess grease.
02 - Reduce the heat to medium, and add the garlic, chili powder, cumin, paprika, and tomato paste. Saute for an additional minute, stirring to combine well.
03 - Pour in the Rotel and beans, and season with salt and pepper to taste.
04 - Cover the pot and simmer over medium-low heat for 10 minutes.
05 - Layer 1 ounce of Frito chips into the bottom of two serving bowls or plates.
06 - Top with an equal mixture of the chili, then sprinkle shredded cheddar cheese on top. Garnish with green onions before serving.

# Notes:

01 - Simmer the chili with the lid on to allow the ingredients and flavors to blend well.
02 - Shred your own cheese for better melting properties, as pre-shredded cheese often contains anti-caking agents.
