Remove the pits from the dates. In a food processor or blender, blitz together the melted butter, egg, vanilla extract, and pitted dates until smooth and creamy.

In a separate bowl, whisk together the all-purpose flour, baking soda, salt, cinnamon, and rolled oats.

Slowly add the dry ingredients to the wet ingredients, stirring until incorporated. Add the chocolate chips and stir until just combined.

Preheat your oven to 350°F (175°C). If the dough seems soft, chill it in the refrigerator for 30 minutes before shaping.

Roll about 2 tablespoons of dough for each cookie. Press the dough down into the desired round shape, as the cookies won't spread much while baking. Add a few chocolate chips on top for appearance if desired. Bake for approximately 8 minutes.
