Date Sweetened, Hearty Cookies (Print Version)

# Ingredients:

01 - ½ cup melted butter
02 - 1 cup pitted medjool dates, lightly packed (10-12 dates)
03 - 1 large egg
04 - 1 ½ tsp pure vanilla extract
05 - ½ cup all-purpose flour
06 - ½ tsp baking soda
07 - ¼ tsp salt
08 - ½ tsp ground cinnamon
09 - 1 cup rolled oats
10 - ½ cup semi-sweet chocolate chips or sugar-free chips if desired

# Instructions:

01 - Remove the pits from the dates. In a food processor or blender, blitz together the melted butter, egg, vanilla extract, and pitted dates until smooth and creamy.
02 - In a separate bowl, whisk together the all-purpose flour, baking soda, salt, cinnamon, and rolled oats.
03 - Slowly add the dry ingredients to the wet ingredients, stirring until incorporated. Add the chocolate chips and stir until just combined.
04 - Preheat your oven to 350°F (175°C). If the dough seems soft, chill it in the refrigerator for 30 minutes before shaping.
05 - Roll about 2 tablespoons of dough for each cookie. Press the dough down into the desired round shape, as the cookies won't spread much while baking. Add a few chocolate chips on top for appearance if desired. Bake for approximately 8 minutes.
06 - Allow the cookies to cool before serving. These cookies are especially enjoyable when chilled in the fridge.

# Notes:

01 - If the dates are too firm, soak them in warm water for 10 minutes to soften. Drain thoroughly and pat dry before blending.
02 - When blending wet ingredients with dates, blend for at least 30 seconds to achieve a creamy consistency with no visible date pieces.
03 - Refrigerate dough for about 30 minutes if it is too soft or sticky to handle.
04 - Portion the dough using a tablespoon measure to ensure uniform sizes for even baking.
